Certification - 316-497
The Department of Health and Social Services, Section 50.545, Stats., requires that beginning January 1, 1995 as a condition of operating a restaurant in Wisconsin, the operator or manager must hold a certification issued by the DHFS as evidence that they are knowledgeable about appropriate food protection practices. This certification is valid for a period of five years and may be renewed with successful rectification training. The course outline follows the National Restaurant Association's criteria of food protection practices.
- Temperature control of potential hazardous food during preparation, storage, transportation and service
- Effective cleaning and sanitation of utensils and equipment
- Food protection, including the shelf life for foods
- Food worker personal hygiene
- Effective handwashing techniques
- Identification of potentially hazardous foods
- Storage and use of toxic products
- Special problems in food service sanitation
Recertification - 316-498
This course provides the opportunity for the student to comprehend the knowledge, skills, process and understanding of procedures for food preparation, sanitation work habits, cleaning work areas and materials, storage of poisonous/toxic materials and the importance of employee training. This course prepares learners to renew their Wisconsin Restaurant Food Protection Certificate. Prerequisite: Valid food protection certificate issued by the State of Wisconsin Department of Health and Family Services. Bring photo I.D. and certificate.
